Mariagertoba population is a heterogeneous hard red spring wheat with a firm gluten structure (high gluten index) developed by Anders Borgen in Denmark. The organic answer to Canadian ‘Manitoba’ flour. It’s ideal for creating airy breads with a crispy crust due to its high protein, strong gluten, and high water absorption. It can be mixed with softer flours for versatility however its superior leavening and baking qualities make it excellent for artisan bread, sourdough, and pastries.
