Named after the Celtic tribe this memorable mixture includes seven heritage winter wheat varieties. It was developed at Gothelney Farm and includes Hen Gymru, Holdfast, Old Devon Blue Rough Chaff, Percivals Blue Cone, Red Lammas, Wilhelmina and Yeoman.. It has a unique “cinnamonish” aroma when baked. Substitute it for regular all-purpose or bread flour in various baking projects, such as sourdough bread or biscuits, to add a unique historical flavour to your bakes.
